This is SO RANDOM (had a lot on my mind the past few days I guess):
Do ALL birds sleep with their heads tucked on their wings? Can they sleep without doing that?

not addressing all birds, but when grover was a baby she could sleep in my hand facing forward

I think most birds do sleep with their heads turned around facing the back. I find that when they are really sleeping more soundly that they all do this, otherwise just a quick nap, no they might not, and just sleep facing forward. Most sleep on one foot as well, but I catch mine during daytime naps when they don't always.
